Two things worth knowing. First, 320kbps is the practical ceiling for this kind of conversion. Source videos are already compressed, so asking for something higher does not recover detail that was never there — it just produces a bigger file containing the same audio. Any tool promising "lossless" MP3 from a streaming video is overselling.
Second, if you are converting speech, 128kbps is genuinely fine. A voice recording at 128kbps sounds essentially identical to the same recording at 320kbps, but takes a third of the space. Save the higher bitrates for music, where the difference is audible.
